Introductions Are Easy As Pie (or Pancakes)

I suppose I should begin with a proper introduction, after all, it is first impressions that can either set one up for disappointment or can lead to one wanting more. Of course I already know which impression I leave on most (it sure as hell isn't disappointment, let me tell you) but alas, I shall begin. ;)

   Hello all! My name is Theary (pronounced Terry). I am a freelance fine artist, illustrator and full-time mama. I am a Cambodian-American woman who was born in a refugee camp in Thailand, where my family fled their homeland in search of a better life. For that, I am forever grateful. Fast forward to 24 years later and here I am as a mother myself (who would've thunk). In the summer of 2011, my long-time boyfriend now turned fiancĂ©e and I were blessed with a little girl. I've always loved the name Amelia and found an alternate spelling, Amillia, that fit perfectly having my own mother's name "ill" in the middle. With the name given, she easily has a few different nicknames but one that has stuck is Mimi, hence the blog name "Mama and Mimi."

   Before she was born, I was attending college and was a semester away from completing my bachelor's degree in Illustration. I decided to put that aside to focus on being a stay at home mother (more so to figure out what the hell we were doing being first time parents). It's funny when you picture things going a certain way only to have that picture rendered in an entirely different medium. The end result comes out more beautiful than you imagined and although it was harder to achieve, you wouldn't have it any other way. Our new picture included the true love of our lives, our little miracle that impacted us in a huge way. We are always learning new things along the way and love the path we've chosen. We are forever grateful for our little blessing and to be her parents. It has been quite the journey; an interesting, sometimes difficult, ca-razy yet fun journey that has just begun.

   During my time as a stay at home mom, I discovered another hidden passion of mine. I've always loved a good meal (see my muffin-top for details), but I found that I've actually grown to like cooking as well. With all honesty, it was more of an after-love type thing because if I didn't cook, more than likely we'd be eating packaged noodles every day prepared by Chef Boyare-don't (loves you still). Many dishes I've learned to make have been self-taught along with some guidance from the all knowing google. 

   I've always enjoyed writing but haven't found time for it (excuses, excuses), so I figured why not start a blog with some recipes along with a mixture of my ridiculous ramblings, occasional rants with inserted f-bombs and all. I mean, I think I'm interesting enough and have interesting things to say. ;)
Here's a recipe that I have tweaked to my own liking. With many of the ingredients, you can substitute them for whatever you prefer. It takes less than 20 minutes to make delicious homemade pancakes. Your family, as well as your wallet, will love these!


Banana Oat Pancakes
  • 1 ripe banana
  • 1 egg 
  • 1/2 C of milk (whole, skim, soy, etc) 
  • 1 tsp baking powder 
  • 1/2 tsp vanilla extract 
  • 1/4 tsp ground cinnamon 
  • 1/4 C sweetened shredded coconut 
  • 1 TBS oil (coconut, canola or vegetable) 
  • 1/4 cup all-purpose flour 
  • 3/4 cup whole grain oats, coarsely blended 
  1. In a medium bowl; mix flour, oats, baking powder & cinnamon. In a large bowl, mash the ripe banana then mix in vanilla, egg, oil & milk. Add dry ingredients just until moistened. Stir in shredded coconut.
  2. Heat skillet on med/hi and drop 1/4 cupfuls of mix on heated oiled skillet. Flip when top starts bubbling. They are done when light golden brown in color. 
  3. Top with fruits, syrup, peanut butter, anything you'd like. They are also delicious alone.
